हिंदी में रेसिपी सामग्री • पीली मूंग दाल - 1 कप • चना दाल - 1 4 कप • प्याज (बारीक़ कटा हुआ) - मध्यम आकर का • टमाटर (बारीक़ कटा हुआ) - मध्यम आकर का • हरी मिर्ची (बारीक़ कटी हुई) - 1 • अदरक (बारीक़ कटा हुआ) - 1 2 इंच टुकड़ा • लहसुन (बारीक़ कटा हुआ) - 7-8 कली • हरा धनिया (बारीक़ कटा हुआ) - 1 बड़ा चम्मच • हींग - 1 4 छोटी चम्मच • गरम मसाला - 1 2 छोटी चम्मच • कश्मीरी लाल मिर्ची पाउडर - 1 छोटी चम्मच • धनिया पाउडर - 1 छोटी चम्मच • नमक स्वाद अनुसार • हल्दी पाउडर - 1 2 छोटी चम्मच • जीरा - 1 2 छोटी चम्मच • राई - 1 2 छोटी चम्मच • कड़ीपत्ता (मीठा नीम) - 10 से 12 पत्ता • साबुत लाल मिर्ची - 2 से 3 • तेल 1 बड़ा चम्मच • घी 1 बड़ा चम्मच बनाने की विधि • पीली मूंग दाल एवं चना दाल दोनों को मिलाकर साफ़ पानी में धोकर आधे घंटे तक भिगोकर रखेंगे । • फिर प्रेशर कुकर में भीगी हुई दाल के साथ 3 कप पानी डालें और 3 सिटी लगाकर पका लेंगे। • एक कड़ाई में तेल और घी दोनो डाल देंगे और गरम कर लेंगे। • गरम हो जाने पर इसमें राई तड़का लेंगे और जीरा, हींग, साबुत लाल मिर्ची, कड़ीपत्ता और बारीक़ कटे हुए हरी मिर्ची, अदरक, लहसुन डालकर मध्यम आंच में थोड़ा पका लेंगे। • अब इसमें प्याज डालकर ब्राउन (भूरा कलर) होने तक अच्छे से पका लेंगे और हल्दी डाल देंगे। • फिर टमाटर, लाल मिर्ची पाउडर, धनिया पाउडर, नमक डालकर सारे मसाले पका लेंगे और ऊपर गरम मसाला भी डालकर उबली हुई दाल भी डाल देंगे। • अब 1 कप पानी डाल देंगे, ढक्कन लगाकर धीमी आंच पर 2 मिनट पका लेंगे। • गैस बंद कर लेंगे और ऊपर से कटा हुआ हरा धनिया भी डाल देंगे। • दाल फ्राई तैयार है, इसे गरमागरम परोस देंगे। Recipe in English Dal fry Introduction Dal Fry is a traditional Indian recipe that is made by adding the boiled and mashed Dal to a gravy that is made from Onion, Tomato and other Indian spices that are fried in ghee and oil It is a popular recipe found in many hotels and dhabas material Yellow Moong Dal - 1 Cup Gram dal - 1 4 cup Onion (finely chopped) - medium size Tomatoes (finely chopped) - come in medium Green Chili (Finely Chopped) - 1 Ginger (finely chopped) - 1 2 inch piece Garlic (finely chopped) - 7-8 bud Green coriander (finely chopped) - 1 tbsp Asafoetida - 1 4 teaspoon Garam Masala - 1 2 Tablespoon Kashmiri Lal Chilli Powder - 1 Tablespoon Coriander Powder - 1 Tablespoon salt to taste Turmeric Powder - 1 2 Tablespoon Cumin seeds - 1 2 teaspoon Mustard seeds - 1 2 teaspoon Hardy (sweet neem) - 10 to 12 leaves Whole red pepper - 2 to 3 Oil 1 tablespoon Ghee 1 tbsp Method • Mix together the Yellow Moong Dal and Gram dal, wash it in clean water and keep it aside for half an hour • Then pour 3 cups of water in the pressure cooker and add the soaked dals Cook the Dal till the pressure cooker gives 3 whistles • Add both oil and ghee in a cooking vessel and heat it • When it gets hot, add mustard seeds and cumin seeds, asafoetida, whole red chili, curry leaves and finely chopped green chilli, ginger, garlic and cook it in a medium flame • Now add onion in it and cook it until brown (brown color) and add turmeric • Then add tomato, red chilli powder, coriander powder, salt and cook all the spices and put garam masala on it and also add boiled dal • Now add 1 cup water, cover the lid and cook for 2 minutes on a low flame • Turn off the gas and put the chopped coriander in the top • Dal fry is ready, serve it
